Our Process
In short, Audley Angus Beef follows a “slow food” production model. Our cattle are awarded a lifetime of freedom to roam our 1,200-acres of pasture, and freedom from steroids, growth hormones, antibiotics, and unnatural feed sources. At full maturation, Audley Angus Beef is humanely processed in small-batch lots at a reputable, family-owned, USDA inspected and approved site in the Shenandoah Valley. Here, the beef is dry-aged to a minimum of 14 days, expertly cut, and vacuum packaged. This tightly controlled process, from farm to freezer, ensures the authenticity, quality, and safety of Audley Angus Beef.
